小窍门&温馨提示
炒糖色时一定要用小火,大火非常容易炒糊
往炒好的糖色加开水时要注意防溅,因为糖色的温度很高
直接煸炒排骨有助于锁住香气
炖排骨时注意水的用量
收汁时要不停地翻炒,否则会粘锅
